I don't know if this is official rules or something but how to you set your monsters to face up defense from your hand? I have only been able to do face down and it's bothering me.

If I remember correctly, unless by the effect of cards such as Light of Intervention, you can't. []

To get a monster in face up defense you have to either:

Special Summon it in defense mode.

The card has to have an effect that changes it to defense when summoned or forces it to only be summoned in face up defense. e.g Summoner Monk

Or set it face down and get it attacked.

They set face up in defense in the japanese anime but you can't do that according to the official rules.

It would be nice if an "anime" mode was made so that you could normal summon in face-up defense mode

Light of Intervention is a good one, use it all the time. Special Summon, or if you're lucky, your opponent gets Swords of Revealing Light and it comes face up, but that's not on your turn so it's very bad. Steelswarm Cell, The Tricky, Goblindbergh, Summoner Monk, Daigusto Emeral, Black Luster Soldier - Envoy of The Beginning, Chaos Sorcerer and Monster Reborn, are good examples of Special summoning in face up defense.
